Four cocktails. Two centuries. One bartender. Pull up a stool — Olivia is going to teach you how a drink as simple as Campari + gin + vermouth can break your heart in four different ways.
Head bartender, Bar Kapsel · 50 Best Bars #34 · 2025
Olivia opened Bar Kapsel in 2022 with a 12-bottle back bar and an obstinate idea about stirring. She still stirs. Three years later, Bar Kapsel ranks #34 on the World's 50 Best Bars list and Olivia turns down a guest residency every other week. Tonight is one she said yes to.
We start at the source and walk forward through the family tree. By the end of the night, you will know which member of the family you actually love — and how to make it for someone else.
Florence, 1919
where it all started
Count Camillo Negroni walked into Caffè Casoni and asked Fosco Scarselli to "make my Americano stronger." Gin in place of soda. The drink was named the next day.
Milan, 1972
the happy accident
Mirko Stocchetto reached for gin, grabbed prosecco, didn't notice for thirty seconds. The drink was halfway to the table. He served it anyway. The bar still gets people asking for the wrong one.
Paris, 1927
the American cousin
Erskine Gwynne — Vanderbilt nephew, Paris-based magazine editor — drank these at Harry's New York Bar. Harry MacElhone wrote the recipe in his 1927 book. The drink survived him by a century.
Copenhagen, 2024
Olivia's stamp on the form
Aquavit for the place we are in, Cynar because Campari is loud, Cocchi for the body. We will build it together — by the end of the night you can build it at home.
Olivia's playlist runs the length of the night. Streamed on the suite's Sonos, we will share the link by morning — should you ever want to recreate the room.
18 stools, by name. Once we are full we are full — Olivia builds for the room she has, not the room she wishes for.
